Have you tried this week's post-workout snack?

Be on the lookout for post-workout snacks at the gym. We will be serving a weekly snack and the recipe will be featured here.
This week: Chocolate Coconut Cashew Bars
Ingredients:
2 cups pitted dates
1 1/2 cups unsweetened coconut, shredded
1 cup raw, unsalted cashews
1/2 cup unsweetened cocoa powder
2 tbsp coconut oil

1. Combine all ingredients in a food processor. Pulse on high for 1-2 minutes, until the ingredients clump together. Scrape the sides down as needed as it blends.
2. Line an 8x8 baking dish with parchment paper. Add the mixture and use your hands to spread it out. A metal spatula is helpful to firmly press the mixture into an even layer. Chill for at least 30 minutes in the refrigerator. Slice into bars and enjoy!
Makes 16 bars.

Nutrition Tip of the Week: Try to have a snack (or meal) within 1 hour after working out. The snack should include carbohydrates and protein to help your body recover and build muscle.

Examples: banana with peanut butter, plain greek yogurt with fruit, trail mix, hummus and crackers, fruit with low-fat cheese stick, and the above chocolate coconut cashew bar!
